Preparation Steps
- Allow turkey to come to room temperature for 1 hour. Remove giblets and pat dry.
- Season the cavity with kosher salt and black pepper, then stuff with onion, lemon, and herbs.
- Mix together butter, garlic, salt, pepper, and herbs in a bowl until creamy.
- Loosen skin and rub 1/3 of the butter under the skin. Coat the outside with remaining butter.
- Preheat oven to 325°F. Line a roasting pan with onion, celery, and carrots.
- Place turkey on the vegetables and roast for approximately 15 minutes per pound.
- Remove from oven and rest turkey covered with foil for at least 30 minutes before carving.
