Ingredients
  

For the Turkey
  • 1 whole Turkey (12 to 18 lb) fully thawed
  • 3 tablespoons Kosher Salt
  • 1 teaspoon Black Pepper freshly ground
For the Stuffing
  • 1 medium Onion
  • 1 whole Lemon
  • 3 sprigs Fresh Rosemary
  • 3 sprigs Fresh Thyme
  • 3 sprigs Fresh Sage
For the Herb Butter
  • 1 cup Unsalted Butter softened
  • 6 cloves Garlic minced
For Roasting Vegetables
  • 2 medium Carrots
  • 2 stalks Celery

Method
 

Preparation Steps
  1. Allow turkey to come to room temperature for 1 hour. Remove giblets and pat dry.
  2. Season the cavity with kosher salt and black pepper, then stuff with onion, lemon, and herbs.
  3. Mix together butter, garlic, salt, pepper, and herbs in a bowl until creamy.
  4. Loosen skin and rub 1/3 of the butter under the skin. Coat the outside with remaining butter.
  5. Preheat oven to 325°F. Line a roasting pan with onion, celery, and carrots.
  6. Place turkey on the vegetables and roast for approximately 15 minutes per pound.
  7. Remove from oven and rest turkey covered with foil for at least 30 minutes before carving.
