Ingredients

For the Noodles
  • 12 sheets Lasagna Noodles Essential for creating comforting layers; watch for even cooking to avoid a soggy base.
For the Filling
  • 4 cups Cooked Chicken Provides protein and richness; leftover roasted chicken makes for an easy addition.
  • 4 cups Spinach Delivers vibrant color and health benefits; squeeze dry before using to prevent excess moisture.
  • 4 cups Ricotta Cheese Adds creaminess that holds everything together; cottage cheese is a lighter substitute if desired.
For the Cheese Layers
  • 4 cups Shredded Mozzarella Cheese Gives that gooey texture we love; use low-moisture mozzarella to keep ghost shapes intact.
  • 1 cup Grated Parmesan Cheese A nutty topping that adds depth of flavor to the dish.
For the Decoration
  • 1 cup Black Olives Sliced to create “eyes” for those adorable mozzarella ghosts.
For the Sauce
  • 6 cups Marinara Sauce Moistens and flavors each layer; let it simmer for thickness if too watery.

Equipment

  • Oven
  • Large baking dish
  • Mixing bowl
  • Pot for Boiling Noodles

Method

Step-by-Step Instructions
  1. Begin by preheating your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until al dente, around 8-10 minutes. Drain and lay flat on a clean kitchen towel.
  3. In a large mixing bowl, combine the ricotta cheese, squeezed-dry spinach, and a sprinkle of salt and pepper. Blend until well incorporated.
  4. Spread a generous layer of marinara sauce on the bottom of a large baking dish.
  5. Layer with noodles, followed by the ricotta-spinach mixture, cooked chicken, mozzarella cheese, and more marinara. Repeat until ingredients are used, finishing with noodles and marinara.
  6. Cut mozzarella slices into ghost shapes for decoration and place them on top, using black olives as eyes.
  7. Sprinkle grated Parmesan cheese over the lasagna and cover with foil. Bake for 30 minutes covered, then remove foil and bake for an additional 10-15 minutes until golden brown.
