Ingredients

For the Refresher Base
  • 2 cups Water Base liquid for refresher; adjust quantity for desired strength.
  • 1 cup Mango Nectar Adds tropical sweetness; you can use pureed mango for a fresh twist.
  • 1/4 cup Granulated Sugar Sweetens the refresher; consider agave syrup for a natural alternative.
  • 2 tablespoons Dragonfruit Powder Provides color and unique flavor; hibiscus powder is a nice substitute.
  • 1 teaspoon Citric Acid Enhances tartness; lemon or lime juice can work but will alter the flavor.
For the Cold Foam
  • 1/2 cup Barista-Style Oat Milk Essential for the creamy cold foam; any plant-based milk will do but may change texture.
  • 2 tablespoons Strawberry Syrup Sweetens and flavors the foam; real strawberries blended into a puree can be a delightful option.
  • 1/4 cup Soy Milk Helps stabilize the cold foam; almond milk or any dairy-free milk can be used instead.
  • 1/4 cup Sweetened Coconut Milk Adds creamy texture; regular dairy milk can substitute for a non-vegan option.
For Decoration
  • Freeze-Dried Dragonfruit Pieces Adds chewy texture and visual appeal; substitute with any freeze-dried fruit like strawberries.
  • Pink & Green Sprinkles Optional for that magical touch; colored sugar or edible glitter works beautifully too.

Equipment

  • Medium saucepan
  • milk frother
  • Cocktail shaker
  • Tall Glass

Method

Step-by-Step Instructions
  1. In a medium saucepan, combine 2 cups of water, 1 cup of mango nectar, 1/4 cup of granulated sugar, 2 tablespoons of dragonfruit powder, and 1 teaspoon of citric acid. Heat the mixture over medium-low heat, whisking gently until the sugar and powders dissolve completely, about 3–5 minutes. Once dissolved, remove from heat and allow it to cool before transferring the refresher base to a jar.
  2. In a clean jar, combine 1/2 cup of barista-style oat milk, 2 tablespoons of strawberry syrup, and 1/4 cup of soy milk. Use a milk frother to whip the mixture until it becomes fluffy and pale, which should take about 1–2 minutes.
  3. Grab a cocktail shaker and fill it with ice cubes. Pour in 1/2 cup of the cooled refresher base, 1/4 cup of sweetened coconut milk, and a handful of freeze-dried dragonfruit pieces. Secure the lid and shake vigorously for about 15 seconds until well-mixed and cold.
  4. Take a tall glass and fill it with ice cubes. Strain the shaken refresher mixture over the ice, allowing the vibrant pink liquid to flow beautifully. Stir in a few more freeze-dried dragonfruit pieces for added texture and visual charm.
  5. Top the drink with the fluffy strawberry cold foam you prepared earlier. For a magical finishing touch, sprinkle some pink and green sprinkles over the cold foam.
