Method
 

Preparation
  1. Wash and slice the English cucumber into thin rounds, halve the cherry tomatoes, and thinly slice the red onion.
  2. Warm the pita bread in a skillet over medium heat or microwave until soft.
  3. Slice the halloumi cheese into 1/2-inch thick pieces and pat dry with paper towels.
  4. Heat a large skillet over medium-high heat and add olive oil.
  5. Place halloumi slices in a single layer and cook undisturbed for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
  6. In each bowl, add a scoop of cooked rice, layer with halloumi, cucumber, cherry tomatoes, red onion, and Kalamata olives.
  7. Top with tzatziki sauce and garnish with fresh dill.
  8. Serve immediately with warm pita wedges.
