Preparation
- Wash and slice the English cucumber into thin rounds, halve the cherry tomatoes, and thinly slice the red onion.
- Warm the pita bread in a skillet over medium heat or microwave until soft.
- Slice the halloumi cheese into 1/2-inch thick pieces and pat dry with paper towels.
- Heat a large skillet over medium-high heat and add olive oil.
- Place halloumi slices in a single layer and cook undisturbed for 2-3 minutes until golden brown. Flip and cook the other side for another 2-3 minutes.
- In each bowl, add a scoop of cooked rice, layer with halloumi, cucumber, cherry tomatoes, red onion, and Kalamata olives.
- Top with tzatziki sauce and garnish with fresh dill.
- Serve immediately with warm pita wedges.
