Ingredients
  

For the Quesadillas
  • 4 count Flour Tortillas Can substitute whole wheat or gluten-free.
  • 2 cups Frozen Chopped Spinach Thawed and well-drained.
  • 1/2 cup Sun-Dried Tomatoes Can use fresh tomatoes if preferred.
  • 1/2 cup Kalamata Olives Can substitute with roasted red peppers.
  • 1 cup Shredded Mozzarella Cheese Provolone or vegan cheese are alternatives.
  • 1/2 cup Crumbled Feta Cheese Goat cheese is a great substitute.
  • 1 tablespoon Fresh Dill Can swap with parsley or oregano.
For the Tzatziki Sauce
  • 1 cup Plain Greek Yogurt Non-dairy yogurt can be used for vegan version.
  • 1 count English Cucumber Zucchini can be used if unavailable.
  • 2 cloves Garlic Freshly pressed is best.
  • 1 tablespoon Fresh Lemon Juice Lemon zest can be added for more flavor.
  • 1 tablespoon Chopped Fresh Mint Optional; skip if desired.
  • 1 tablespoon Olive Oil Avocado oil can be used as an alternative.

Method
 

Prepare the Tzatziki Sauce
  1. In a medium bowl, combine Greek yogurt, diced cucumber, pressed garlic, fresh dill, and lemon juice. Mix well, season with salt and pepper, and drizzle with olive oil. Refrigerate for at least 10 minutes.
Preheat the Oven
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Assemble the Quesadillas
  1. Lay out the flour tortillas. Spread thawed spinach, sun-dried tomatoes, and olives evenly on half of each tortilla. Top with mozzarella and feta cheese, then fold the tortillas.
Bake the Quesadillas
  1. Arrange the filled tortillas on the baking sheet and bake for 8–10 minutes until golden and crispy.
Serve and Enjoy
  1. Remove the quesadillas from the oven, let cool slightly, cut into wedges, and serve with chilled tzatziki.

Notes
