  • 1 cup Orzo Pasta or quinoa for gluten-free
  • 2 pieces Boneless Skinless Chicken Breasts or turkey/tofu

  • 2 tablespoons Apple Cider Vinegar or white wine vinegar

Method
 

Preparation Steps
  1. Cook the Orzo: Bring a large pot of salted water to a boil. Add orzo pasta and cook for 8-10 minutes until al dente. Drain and spread on a baking sheet to cool.
  2. Prepare the Marinade: Whisk together olive oil, lemon juice, oregano, garlic powder, salt and pepper. Pour over chicken in a resealable bag and refrigerate for at least 30 minutes.
  3. Grill the Chicken: Preheat grill to medium-high. Grill chicken for 6-7 minutes on each side until golden brown and cooked through. Let rest for 5 minutes before slicing.
  4. Assemble the Salad: In a large bowl, combine orzo, avocado, cherry tomatoes, red onion, and parsley. Toss gently.
  5. Mix the Dressing: Whisk together bacon, mayonnaise, honey, mustard, vinegar, salt, and pepper in a separate bowl.
  6. Combine and Serve: Drizzle dressing over the salad and toss. Top with sliced grilled chicken and serve immediately.
