- In a mixing bowl, combine 1/4 cup of melted unsalted butter, 1/3 cup of dark brown sugar, 1 teaspoon of ground cinnamon, 1/4 teaspoon of cloves, 1/2 teaspoon of ground cumin, and 1/2 teaspoon of red chili powder. Stir well until fully blended to create a smooth marinade.
- Cut off the top and bottom of a fresh pineapple, make a vertical slit down the sides to remove the outer rind, then slice into 1/2 to 1-inch thick rings.
- Preheat your grill or grilling pan to medium heat (around 350°F/175°C). Brush grates with marinade to prevent sticking.
- Grill the pineapple slices on the preheated grill and generously brush with more marinade. Cook for 2-5 minutes until caramelized grill marks appear.
- Using tongs, flip the slices, apply more marinade, and continue grilling for another 2-5 minutes until tender and charred.
- Remove the slices from heat and serve warm or cool, drizzling any remaining marinade on top.
