Ingredients
  

For the Steak
  • 1 pound Skirt Steak Flank steak can be used as a substitute.
  • 1 tablespoon Chili Powder Adjust for spice preference.
  • 1 teaspoon Garlic Powder Fresh garlic can be used.
  • 1/2 teaspoon Cinnamon
  • 1 teaspoon Cumin
  • 1 teaspoon Salt Sea salt or kosher salt is recommended.
For the Salsa
  • 1/2 cup Cucumber Diced, can substitute regular cucumber.
  • 1 ear Grilled Corn Can also use canned or frozen corn.
  • 1 tablespoon Lime Juice Freshly squeezed.
  • 1/4 cup Red Onion Diced.
  • 1/4 cup Jalapeño Diced, reduce for less heat.
For the Tacos
  • 6 pieces Corn Tortillas Flour tortillas for non-gluten-free.
  • 1 piece Avocado Optional.
  • 1 tablespoon Cilantro Fresh herb.

Method
 

Step-by-Step Instructions
  1. In a small bowl, mix together chili powder, garlic powder, cinnamon, cumin, and salt until well combined. Rub the mixture over the skirt steak and let it sit for at least 15 minutes.
  2. Preheat your grill to medium-high heat, about 400°F (200°C). Grill the seasoned skirt steak for 3-5 minutes on each side until charred and cooked to desired doneness. Remove from grill, cover with foil, and let rest for 10 minutes.
  3. Grill the ear of corn, turning every few minutes until it's charred and tender, roughly 10-15 minutes.
  4. In a mixing bowl, combine diced cucumber, kernels from the grilled corn, diced jalapeño, and diced red onion. Squeeze lime juice over the mixture and add salt to taste. Stir to combine.
  5. Slice the rested steak thinly against the grain. Take a warm corn tortilla, add steak slices, top with salsa, cilantro, and avocado if desired. Fold and serve.
