  • 1 Baby Bella Mushrooms Button mushrooms work well as a substitute.
  • 1/2 cup Pineapple Chunks Fresh or canned pineapple enhances the kabobs.
For the Marinade
  • 1 cup P.F. Chang's Home Menu Teriyaki Sauce Can try other brands or homemade sauce.

Equipment

  • Grill
  • Wooden skewers
  • Shallow Dish or Zip-top Bag

Method

Step-by-Step Instructions
  1. Start by washing and chopping the red and yellow peppers into bite-sized pieces.
  2. Slice a small onion into quarters, ensuring you separate the layers for grilling.
  3. Clean the baby bella mushrooms and remove any stems.
  4. Take wooden skewers (soaked in water for about 30 minutes to prevent burning) and begin assembling your kabobs.
  5. Alternate threading the chicken pieces, red pepper, yellow pepper, onion layers, mushrooms, and pineapple chunks onto each skewer.
  6. Once assembled, place them in a shallow dish or zip-top bag.
  7. Generously baste the skewers with teriyaki sauce and allow to marinate for about 30 minutes.
  8. Preheat your grill to medium-high heat, about 400°F (200°C).
  9. Carefully place the marinated kabobs on the grill.
  10. Cook for 5-6 minutes per side, turning carefully with tongs.
  11. Remove them from the grill and let them rest on a platter for 2-3 minutes before serving.
