For the Watermelon
  • 1 large Watermelon Cuts into wedges and grilled
For the Topping
  • 1 cup Corn Kernels Fresh or canned, rinsed
  • 1/4 cup Red Onion Diced
  • 1 medium Red Bell Pepper Diced
  • 2 cloves Garlic Minced
  • 1 teaspoon Sea Salt Adjust to taste
  • 1 tablespoon Tabasco Green Sauce Can substitute with lime juice
  • 1/2 cup Feta Cheese Crumble on top
  • 1 large Avocado Diced
  • 1/4 cup Mint and/or Basil Leaves For garnish
  • 1 tablespoon Cooking Spray To prevent sticking

Method
 

  1. Prepare the Topping: Combine fresh corn kernels, diced red onion, red bell pepper, minced garlic, sea salt, and Tabasco sauce in a bowl. Cover and refrigerate.
  2. Preheat the Grill: Heat the grill to medium-high. Slice the watermelon into thick wedges and coat the grill grates with cooking spray.
  3. Grill the Watermelon: Grill the watermelon wedges for 2-3 minutes per side until grill marks form and the inside remains juicy.
  4. Cool and Assemble: Let grilled watermelon cool for a few minutes and top with corn mixture, crumbled feta, and diced avocado.
  5. Garnish and Serve: Sprinkle mint or basil leaves on top and serve warm with lime wedges or Tabasco.
