Ingredients

For the Filling
  • 12 pieces Pitted Dates Medjool dates work beautifully for rich flavor.
  • 1 cup Smooth Peanut Butter Substitute with almond or sunflower seed butter for nut-free option.
  • 1/2 cup Salted Roasted Peanuts Can use unsalted for milder taste.
For the Coating
  • 40 g Dark Chocolate Choose dairy-free and refined sugar-free options to keep it vegan.

Equipment

  • Bain-marie
  • Freezer-friendly container
  • greaseproof paper

Method

Step-by-Step Instructions
  1. Start by pitting each date carefully to remove the stone. Stuff about 1 teaspoon of smooth peanut butter into the center of each date along with a few salted roasted peanuts for added crunch.
  2. Once all dates are filled, place them in a freezer-friendly container, ensuring they are not touching. Freeze the container for at least one hour.
  3. While the dates are freezing, melt 40g of dark chocolate using a bain-marie or microwave until smooth and fully melted.
  4. Dip each frozen date into the melted chocolate, allowing any excess chocolate to drip off back into the bowl.
  5. Return the coated dates to the freezer for approximately 15-20 minutes to harden the chocolate.
  6. Once the chocolate has hardened, transfer the Healthy Snickers Ice Cream Bites to a sealable container for storage in the freezer.
