- Start by pitting each date carefully to remove the stone. Stuff about 1 teaspoon of smooth peanut butter into the center of each date along with a few salted roasted peanuts for added crunch.
- Once all dates are filled, place them in a freezer-friendly container, ensuring they are not touching. Freeze the container for at least one hour.
- While the dates are freezing, melt 40g of dark chocolate using a bain-marie or microwave until smooth and fully melted.
- Dip each frozen date into the melted chocolate, allowing any excess chocolate to drip off back into the bowl.
- Return the coated dates to the freezer for approximately 15-20 minutes to harden the chocolate.
- Once the chocolate has hardened, transfer the Healthy Snickers Ice Cream Bites to a sealable container for storage in the freezer.
