  • 1 can tomatoes fresh or canned
  • 2 cloves garlic minced

Method
 

Preparation
  1. Gather fresh vegetables, including potatoes, onions, and carrots, rinse, peel, and chop.
  2. In a large pot over medium heat, add oil and sauté diced onions for 5-7 minutes until translucent.
  3. Add chopped potatoes and carrots to the pot along with the broth; increase heat to bring to a boil.
  4. Reduce heat and let the soup simmer uncovered for about 30 minutes, stirring occasionally.
  5. Use an immersion blender to puree the soup for a smooth Kartoffelsuppe or leave it chunky for Gulaschsuppe.
  6. Stir in cream or coconut milk; adjust seasoning with salt, pepper, and fresh herbs.
  7. Ladle into bowls and serve with fresh herbs and crusty bread or pretzels.
