  • 4 pieces Boneless, skinless chicken breasts or chicken thighs for richer flavor
  • 1/4 cup Honey maple syrup for vegan option
  • 1/4 cup Lime juice freshly squeezed
  • 1 tablespoon Lime zest
  • 2 cloves Garlic minced
  • 1 teaspoon Ground cumin adjust to taste
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Rice
  • 1 cup Jasmine rice or basmati rice
  • 2 cups Chicken broth for cooking rice
For the Avocado Mix
  • 2 pieces Avocado diced
  • 1 small Red onion finely chopped
  • 1/4 cup Fresh cilantro or parsley
  • 1 tablespoon Olive oil
For Serving
  • 1 pieces Lime wedges for garnish

Method
 

Marinating Chicken
  1. In a medium bowl, whisk together honey, lime juice, lime zest, garlic, cumin, salt, and pepper. Place the chicken in a resealable bag with the marinade, ensuring each piece is coated. Marinate in the fridge for 30 minutes up to 2 hours.
Cooking Rice
  1. Rinse jasmine rice under cold water until clear. In a saucepan, bring chicken broth to a boil, add rinsed rice, reduce heat, cover, and simmer for 15 minutes until liquid is absorbed.
Grilling Chicken
  1. Preheat grill to medium-high heat. Grill marinated chicken for 6-7 minutes on each side until cooked through and internal temperature reaches 165°F.
Preparing Avocado Mix
  1. In a bowl, mix diced avocado, red onion, cilantro, and olive oil until evenly combined.
Assembling Stack
  1. On plates, layer jasmine rice as the base, top with sliced grilled chicken, add avocado mix, and garnish with lime wedges.
