Marinating and Cooking
- In a medium bowl, whisk together honey, lime juice, chili powder, garlic powder, cumin, and salt and pepper until well combined.
- Add medium shrimp to the marinade, tossing gently to coat. Cover with plastic wrap and let sit at room temperature for about 15 minutes.
- Heat a large skillet over medium-high heat and add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side until shrimp turn pink and opaque.
- While shrimp cook, warm corn tortillas in another skillet over medium heat or microwave for about 30 seconds.
- Assemble tacos by placing shrimp on each tortilla, topping with red cabbage and avocado slices. Sprinkle with cilantro and drizzle extra lime juice.
