Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and toast 2 cups of pecans on a lined baking sheet for 8-10 minutes.
  2. Melt 6 tablespoons of butter in a microwave-safe bowl, then add ½ cup each of light brown sugar, granulated sugar, light corn syrup, and sweetened condensed milk.
  3. Microwave the mixture on high for about 6 minutes, stirring halfway through.
  4. Remove from the microwave and stir in 1½ teaspoons of vanilla extract and the toasted pecans.
  5. Transfer the warm mixture into a lined baking pan and refrigerate for at least 30 minutes.
  6. Melt 2 cups of chopped chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  7. Scoop portions of the cooled caramel-pecan mixture and dip each into the melted chocolate, placing on wax paper.
  8. Chill the dipped turtles in the refrigerator for about 30 minutes to set.
