Ingredients
  

For the Sauce
  • 2 tablespoons Vegetable Oil can substitute with olive oil
  • 2 tablespoons Flour can substitute with gluten-free flour
  • 2 tablespoons Chili Powder adjust for desired spiciness
  • 1 teaspoon Garlic Powder can replace with fresh garlic
  • 1 teaspoon Onion Powder can replace with fresh onion
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 2 tablespoons Tomato Paste can substitute with pureed tomatoes
  • 2 cups Chicken (or Vegetable) Stock use low-sodium stock
  • 1 teaspoon Sea Salt adjust according to preference
For the Filling
  • 1 pound Ground Beef or substitute with ground turkey or shredded chicken
  • 1 teaspoon Kosher Salt can substitute with regular salt
  • 1 teaspoon Black Pepper can substitute with regular pepper
  • 1 medium Onion can substitute with shallots or omit
  • 1 medium Red Bell Pepper any color bell pepper can be used
  • 2 cloves Garlic (fresh) can replace with garlic powder
  • 1 can Green Chiles (canned) fresh or frozen chiles can be substituted
  • 1 can Black Beans (canned, drained, and rinsed) can also substitute with pinto beans
  • 1 cup Corn (canned or frozen) fresh corn can be substituted in season
For Assembly
  • 12 pieces Corn Tortillas can substitute with flour tortillas
  • 2 cups Pepper Jack & Medium Cheddar Cheese use your favorite cheese blend

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and gather your ingredients and a large saucepan for the enchilada sauce.
  2. In the saucepan, heat vegetable oil over medium heat and whisk in flour, cooking until golden.
  3. Add chili powder, garlic powder, onion powder, cumin, oregano, and tomato paste; then whisk in chicken stock and salt, simmering to thicken.
  4. In a skillet, brown ground beef and season with salt and pepper; then add onion and bell pepper, cooking until softened.
  5. Stir in garlic, green chiles, black beans, and corn, mixing until heated.
  6. Assemble the casserole by layering tortillas dipped in sauce, beef filling, and cheese in a baking dish.
  7. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 15 minutes.
  8. Let the casserole rest for about 5 minutes before serving with toppings.
