Cookie Preparation
- Preheat the oven to 375°F (190°C) and line two large baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly mixed.
- In a large bowl, cream together the butter, dark brown sugar, and granulated sugar for about 2 minutes until light and fluffy.
- Add the eggs and vanilla extract to the creamed mixture and beat until just combined, then let rest for 5 minutes.
- Gently fold the dry mixture into the wet ingredients until just combined.
- Fold in the chocolate chips, toffee bits, and chopped espresso beans until evenly distributed.
- Roll the dough into 3-tablespoon-sized balls, placing them on the prepared baking sheets with 2 inches spacing.
- Bake for 11-14 minutes until the edges are golden brown and the centers still look soft.
- Allow to cool on the sheets for 5 minutes before transferring to a wire rack.
