- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or butter.
- In a medium bowl, combine 2 cups of diced fresh peaches, ½ cup of granulated sugar, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Mix until well coated and set aside for 10 to 15 minutes.
- In a large bowl, whisk together 2 cups of all-purpose flour, 1 cup of rolled oats, 1 teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of ground cinnamon, and ½ teaspoon of salt. Then, pour in 1 cup of melted unsalted butter and ½ cup each of granulated and brown sugar, plus 1 beaten egg. Mix until crumbly.
- Press half of the crumble mixture into the bottom of the greased baking dish, ensuring it's packed down well.
- Pour the prepared peach filling over the pressed crumble base, spreading it evenly.
- Sprinkle the remaining crumble mixture over the peach layer, covering it mostly.
- Bake in the preheated oven for 30 to 35 minutes until golden brown and the peach filling is bubbling. The aroma will be irresistible!
- Cool the bars for 15 to 20 minutes before slicing for clean cuts.
