- Combine flour, sugar, and salt, then cut in chilled butter until coarse crumbs form.
- Divide dough, wrap in plastic, and refrigerate for at least 1 hour.
- Hull and halve strawberries. Toss with sugar, cornstarch, lemon juice, and vanilla. Let sit for 10 minutes.
- Roll out one disc of dough to 12 inches and place in pie pan.
- Pour filling into crust and dot with small pieces of butter.
- Roll out second disc, place on top, trim, crimp edges, and cut slits for steam.
- Brush with egg wash, sprinkle sugar if desired.
- Bake at 375°F for 45-55 minutes until golden brown and bubbling.
