Method
 

  1. Preheat your oven to 350°F (175°C) and grease an 11 x 7-inch baking dish.
  2. In a large mixing bowl, coarsely chop the drained artichoke hearts, thawed and squeezed spinach, chopped scallions, minced garlic, and shredded cheese. Stir until well combined.
  3. Spoon the mixture into the prepared baking dish and spread it evenly across the bottom.
  4. In a separate bowl, whisk together the eggs, mayonnaise, mascarpone or cream cheese, half-and-half or milk, salt, and black pepper until fully combined.
  5. Pour the egg mixture evenly over the filling and bake for 30-35 minutes until golden brown and set.
  6. Cool slightly on a wire rack for 10 minutes before slicing into squares and serving warm.
