- Preheat your oven to 350°F (175°C) and grease an 11 x 7-inch baking dish.
- In a large mixing bowl, coarsely chop the drained artichoke hearts, thawed and squeezed spinach, chopped scallions, minced garlic, and shredded cheese. Stir until well combined.
- Spoon the mixture into the prepared baking dish and spread it evenly across the bottom.
- In a separate bowl, whisk together the eggs, mayonnaise, mascarpone or cream cheese, half-and-half or milk, salt, and black pepper until fully combined.
- Pour the egg mixture evenly over the filling and bake for 30-35 minutes until golden brown and set.
- Cool slightly on a wire rack for 10 minutes before slicing into squares and serving warm.
