Dough Preparation
- Prepare your pizza dough. For homemade dough, let it rise in a warm spot for 1 hour until doubled.
- For store-bought dough, leave it at room temperature for about the same time.
Preheat Oven
- Preheat your oven to the maximum temperature, ideally 500°F. Heat for about 20 minutes.
Prepare Toppings
- In a mixing bowl, combine the ricotta, lemon zest, sea salt, and pepper.
- In another bowl, mix the corn, chili, olive oil, and a sprinkle of salt and pepper.
Par-Bake Crust
- Dust a baking sheet with cornmeal, stretch the dough into a 12-inch round, and poke holes in it.
- Par-bake for 8 minutes until it begins to firm up.
Add Toppings
- Spread the ricotta mixture over the par-baked crust.
- Sprinkle mozzarella, followed by corn and chili mixture evenly.
Final Bake
- Return the pizza to the oven for 10-12 minutes, until golden and cheese is bubbly.
Finish & Serve
- Let the pizza cool for a minute, garnish with pesto, smoked paprika, and basil.
- Slice and enjoy the flavors!
