  • 1 package Pizza Dough homemade or store-bought
For the Toppings
  • 1 cup Whole Milk Ricotta Cheese or cottage cheese
  • 1 teaspoon Lemon Zest omit if unavailable
  • to taste Sea Salt adjust to taste
  • 1 ear Fresh Corn kernels
  • 1 medium Fresno Chili thinly sliced
  • 2 tablespoons Extra-Virgin Olive Oil
  • 2 tablespoons Cornmeal for dusting
  • 1 cup Low-Moisture Part-Skim Mozzarella Cheese or goat cheese
  • 1/4 cup Basil Pesto store-bought or homemade
  • 1 teaspoon Smoked Paprika optional
  • 1/4 cup Fresh Basil Leaves for garnish

Method
 

Dough Preparation
  1. Prepare your pizza dough. For homemade dough, let it rise in a warm spot for 1 hour until doubled.
  2. For store-bought dough, leave it at room temperature for about the same time.
Preheat Oven
  1. Preheat your oven to the maximum temperature, ideally 500°F. Heat for about 20 minutes.
Prepare Toppings
  1. In a mixing bowl, combine the ricotta, lemon zest, sea salt, and pepper.
  2. In another bowl, mix the corn, chili, olive oil, and a sprinkle of salt and pepper.
Par-Bake Crust
  1. Dust a baking sheet with cornmeal, stretch the dough into a 12-inch round, and poke holes in it.
  2. Par-bake for 8 minutes until it begins to firm up.
Add Toppings
  1. Spread the ricotta mixture over the par-baked crust.
  2. Sprinkle mozzarella, followed by corn and chili mixture evenly.
Final Bake
  1. Return the pizza to the oven for 10-12 minutes, until golden and cheese is bubbly.
Finish & Serve
  1. Let the pizza cool for a minute, garnish with pesto, smoked paprika, and basil.
  2. Slice and enjoy the flavors!
