Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and prepare the jalapeños by slicing them in half, removing seeds and membranes, and filling with cream cheese. Bake for 25–30 minutes until soft and bubbly.
  2. Let the jalapeños cool slightly, then chop them. Layer cheddar cheese on one slice of bread and Monterey Jack on another. Add jalapeños and bacon, and sprinkle cilantro if using, before closing the sandwich.
  3. Heat a skillet over medium-low heat, butter the outer sides of the sandwiches, and grill for 3-4 minutes per side until golden and the cheese is melty.
  4. Remove from skillet, let rest for a minute, and cut in half. Serve warm, optionally with tomato soup.
