- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine 1 cup of unsalted butter, ½ cup of granulated sugar, and ½ cup of brown sugar. Beat until light and fluffy, about 2–3 minutes.
- Add 1 large egg, 1 egg yolk, 2 teaspoons of vanilla extract, and ½ cup of molasses. Mix until fully integrated.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 2 teaspoons of ground cinnamon, ½ teaspoon of ground cloves, ½ teaspoon of ground nutmeg, 1 teaspoon of ground ginger, and a pinch of salt. Gradually mix into the wet ingredients.
- Fold in 2 cups of old-fashioned oats gently with a spatula.
- Cover your cookie dough with plastic wrap and refrigerate for at least 30 minutes.
- After chilling, scoop dough onto the prepared baking sheets, leaving about 2 inches of space. Bake for 12–15 minutes.
- Let the cookies rest on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
