Preparation Steps
  1. In a mixing bowl, pour 2 cups of fresh heavy cream and beat on medium speed until soft peaks form, about 3-5 minutes.
  2. Gather your favorite ice cream sandwiches, about 6-8, and soften them for 5-10 minutes. Line your loaf pan with plastic wrap.
  3. Layer one ice cream sandwich in the loaf pan, spread whipped cream over it, alternating layers until filled.
  4. Cover with plastic wrap and freeze for at least 8 hours or overnight.
  5. Melt 1/2 cup of dark chocolate in the microwave in 30-second intervals. Stir in 1 teaspoon of cinnamon.
  6. Lift out the semifreddo from the pan, slice, and drizzle with the cinnamon-chocolate mixture before serving.
