Ingredients

For the Cake
  • 1 box Box Cake Mix Any flavor like vanilla or chocolate
For the Frosting
  • 1 can Frosting Canned or homemade
For the Bunny Decoration
  • 2 cups Shredded Coconut Sweetened
  • 1 cup Jelly Beans Colored for facial features
  • 1/2 cup Mini Chocolate Chips For the smile
  • 1 pack Sour Candy Belts For whiskers
  • as needed Food Gel Color For dyeing frosting and coconut

Equipment

  • Oven
  • Round cake pans
  • Wire racks
  • serrated knife

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare the box cake mix according to package instructions and pour the batter evenly into two greased round cake pans. Bake for 25-30 minutes until a toothpick comes out clean. Let cakes cool for 10 minutes, then transfer to wire racks to cool completely.
  2. Once cool, cut one cake into shapes for the bunny head and ears. The second cake can be used for the bowtie. Freezing the shaped pieces for about 30 minutes helps minimize crumbling.
  3. Take the frozen bunny pieces out and cover with room temperature frosting to create a smooth layer.
  4. Press shredded coconut onto the frosted areas to create the bunny's fur.
  5. Decorate with jelly beans for eyes, nose, and inner ears. Use mini chocolate chips for a smile. Cut sour candy belts into strips for whiskers.
  6. Dye some shredded coconut with food gel color to create edible 'grass' and sprinkle around the base.
  7. Serve and enjoy your Easy Coconut Easter Bunny Cake!
