Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Grate about one medium zucchini and squeeze out excess moisture.
  3. Grease a 9'x5' loaf pan, optionally lining the bottom with parchment paper.
  4. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  5. In a large bowl, whisk together eggs, oil, water, sugar, and vanilla.
  6. Gradually add dry ingredients to the wet mixture, stirring gently.
  7. Fold in grated zucchini and mini chocolate chips.
  8. Pour batter into the prepared loaf pan, smoothing the top.
  9. Optionally, sprinkle additional regular-sized chocolate chips on top.
  10. Bake for about 1 hour, until a toothpick inserted comes out mostly clean.
  11. Remove from oven and cool in the pan for 15 minutes.
  12. Transfer to a wire rack and cool completely before slicing.
