- Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing it or lining with paper liners.
- In a large bowl, whisk together granulated sugar, flour, baking powder, and salt. Stir in chocolate chips.
- In a separate bowl, whisk together the egg, oil, milk, ricotta, and vanilla until smooth.
- Gently fold the wet ingredients into the dry mix until just combined; do not overmix.
