Ingredients
  

For the Salad
  • 1 can Chickpeas rinsed and drained
  • 8 oz Provolone Cheese diced
  • 4 oz Salami sliced; omit for vegetarian
  • 1/2 cup Black Olives chopped
  • 1 cup Roasted Red Bell Pepper diced
  • 1/4 cup Pepperoncini Peppers sliced
  • 1/2 medium Red Onion thinly sliced
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil or avocado oil
  • 2 tbsp Red Wine Vinegar or white wine vinegar
  • 2 cloves Garlic minced
  • 1 tsp Dried Oregano or thyme
  • to taste Kosher Salt
  • to taste Black Pepper

Method
 

Instructions
  1. In a large mixing bowl, add the chickpeas, provolone cheese, salami, black olives, roasted red bell pepper, pepperoncini peppers, and red onion. Stir gently until well combined.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, and oregano. Season with salt and pepper.
  3. Pour the dressing over the salad ingredients and toss until everything is coated.
  4. Taste and adjust seasoning as needed.
  5. Serve immediately, or store in an airtight container in the fridge for up to 3 days.
