Ingredients
  

For the Pasta
  • 12 oz Rigatoni Pasta Sturdy shape holds sauce well
For the Sausage
  • 1 lb Italian Sausage (Hot or Mild) Select according to spice preference
For the Vegetables
  • 2 tbsp Olive Oil Extra virgin recommended
  • 1 medium Yellow Onion Chopped
  • 1 cup Bell Peppers (Red, Yellow, Green) Chopped; mix and match
  • 1 cup Grape Tomatoes Can substitute with cherry tomatoes
For the Flavor Boosters
  • 3 oz Pepperoni Turkey pepperoni can be used
  • 1 cup Mozzarella Cheese (Shredded and Slices) For topping
  • 1/2 cup Parmesan Cheese Finely grated
  • 1 jar Spaghetti Sauce Use preferred sauce
  • 1 tbsp Italian Seasoning Can substitute with oregano or basil
  • 1/4 cup Fresh Basil Chopped; dried basil can be substituted

Method
 

Cooking Instructions
  1. In a large skillet over medium-high heat, add the Italian sausage. Cook for 3-5 minutes, breaking it apart with a spatula until browned and cooked through.
  2. Lower the heat to medium and add a drizzle of olive oil. Sauté the chopped onion and bell peppers for 3-5 minutes until they start to soften.
  3. Stir in the grape tomatoes and cook for about 5 minutes, allowing them to soften.
  4. Increase the heat back to medium and add the pepperoni slices, cooking for about a minute until crispy.
  5. Return the browned sausage and sautéed vegetables to the skillet with the pepperoni. Pour in spaghetti sauce and mix in the cheeses until melted.
  6. If oven-safe, switch to broil and top with mozzarella for 1-2 minutes until melty and golden.
  7. Serve topped with crispy pepperoni, Italian seasoning, and fresh basil.
