Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and place a baking sheet on your counter. Lightly spray with olive oil.
  2. In a large mixing bowl, combine the ground beef with salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, and grated onion. Add the egg white for binding and mix thoroughly.
  3. Slice the mini peppers in half lengthwise, removing seeds and membranes. Arrange the halved peppers on the greased baking sheet.
  4. Spoon about 1 to 1½ tablespoons of the filling into each mini pepper half, fill to about ⅓ inch below the top.
  5. Bake for 20 minutes, or until the peppers are tender and the filling is hot and bubbling.
  6. Sprinkle shredded mozzarella cheese over the tops of the stuffed peppers. Return to the oven for an additional 3-4 minutes until the cheese is melted.
  7. Remove from oven, garnish with fresh parsley if desired. Serve warm.
