- Preheat your oven to 350°F (175°C) and place a baking sheet on your counter. Lightly spray with olive oil.
- In a large mixing bowl, combine the ground beef with salt, black pepper, paprika, Italian seasoning, garlic powder, ground cumin, and grated onion. Add the egg white for binding and mix thoroughly.
- Slice the mini peppers in half lengthwise, removing seeds and membranes. Arrange the halved peppers on the greased baking sheet.
- Spoon about 1 to 1½ tablespoons of the filling into each mini pepper half, fill to about ⅓ inch below the top.
- Bake for 20 minutes, or until the peppers are tender and the filling is hot and bubbling.
- Sprinkle shredded mozzarella cheese over the tops of the stuffed peppers. Return to the oven for an additional 3-4 minutes until the cheese is melted.
- Remove from oven, garnish with fresh parsley if desired. Serve warm.
