  • 1 cups sugar sweetens and browns the cake
  • 1 large egg or flax egg for vegan
  • 1 teaspoon vanilla extract pure for best results
  • 0.5 cups milk any type, like almond or soy
Plum Topping
  • 3-4 ripe plums sliced into wedges
  • 2 tablespoons additional sugar for sweetening plums

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, whisk together the dry ingredients: flour, baking powder, cinnamon, nutmeg, cardamom, and salt.
  3. In an electric mixer, beat softened butter and sugar until pale and fluffy, about 3 minutes.
  4. Add egg and vanilla extract to the butter-sugar mixture, and mix on low until just combined.
  5. Gradually add the dry ingredients alternating with milk, mixing until just smooth.
  6. Spread the batter evenly into the springform pan and arrange sliced plums on top.
  7. Sprinkle additional sugar over the plum slices.
  8. Bake for 60 to 70 minutes or until golden brown and a toothpick comes out clean.
  9. Cool in the pan for about 15 minutes before transferring to a wire rack.
