Dough Preparation
  1. In a mixing bowl, combine warm water and yeast. Let it stand for 5-10 minutes until frothy.
  2. Add flour, salt, sugar, and olive oil to the yeast mixture. Stir until combined, then knead for 7-10 minutes.
  3. Place kneaded dough in a greased bowl. Cover and let it rise for 1 hour or until doubled.
  4. Punch down the dough and transfer to a greased 9x13-inch pan. Stretch and cover, letting it rise for 30-45 minutes.
  5. Preheat oven to 400°F (200°C). Dimple the dough and top with blueberries and lemon zest.
  6. Bake for 20-25 minutes until golden brown and edges are crisp.
  7. Mix powdered sugar with lemon juice for glaze. Drizzle over warm bread after cooling for 10 minutes.
