Preparation Steps
- Preheat your oven to 400°F (200°C) and grease a 24-count mini muffin pan.
- In a large mixing bowl, combine leftover mashed potatoes, beaten eggs, 1 cup of shredded cheddar cheese, finely chopped bacon, pepper, and chives. Mix until well combined.
- Scoop the mixture into each greased muffin cup, filling them to the top, and sprinkle the remaining cheddar cheese on top.
- Bake for approximately 18 minutes until the tops are golden brown.
- Allow the cups to cool for a few minutes, then remove from the pan and serve warm, optionally with sour cream.
