Preparation Steps
  1. Preheat your oven to 400°F (200°C) and grease a 24-count mini muffin pan.
  2. In a large mixing bowl, combine leftover mashed potatoes, beaten eggs, 1 cup of shredded cheddar cheese, finely chopped bacon, pepper, and chives. Mix until well combined.
  3. Scoop the mixture into each greased muffin cup, filling them to the top, and sprinkle the remaining cheddar cheese on top.
  4. Bake for approximately 18 minutes until the tops are golden brown.
  5. Allow the cups to cool for a few minutes, then remove from the pan and serve warm, optionally with sour cream.
