  • 1 half Fresh Lemon Juice Freshly squeezed is best.
  • Ice For shaking and chilling.

Method
 

Step-by-Step Instructions
  1. Sift 1 teaspoon of matcha powder into a small heatproof bowl.
  2. Heat about 2 tablespoons of water in the microwave for 15 seconds and whisk into the sifted matcha until smooth.
  3. Pour the matcha mix into a cocktail shaker.
  4. Add aquafaba (or egg white), 1 ounce of coconut milk, 2 ounces of gin, 1 ounce of triple sec, 1 teaspoon of honey, and juice from half a lemon.
  5. Fill the shaker with ice and shake vigorously for about 20 seconds.
  6. Strain the mixture into a coupe glass using a fine mesh strainer.
  7. Garnish with a dusting of matcha powder on top.
