Ingredients
  

For the Roasted Red Pepper Sauce
  • 2 peppers red bell
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • 3 cloves garlic fresh or powder
  • 1 teaspoon sea salt adjust to taste
For the Meatballs
  • 1 pound ground turkey or chicken
  • 1 pound ground turkey sausage or pork sausage
  • 1 large egg or flax egg for vegan
  • 1/2 cup almond flour or gluten-free breadcrumbs
  • 1 teaspoon salt adjust based on dietary needs
  • 1 small red onion chopped
  • 2 tablespoons coconut aminos or soy sauce
  • 1/4 cup fresh parsley or dried
  • 2 tablespoons fresh mint or oregano

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Halve the red bell peppers and remove the seeds. Brush with olive oil and roast for about 20 minutes.
  3. Lower the oven temperature to 375°F (190°C) after the peppers are done.
  4. In a mixing bowl, combine ground turkey, ground turkey sausage, egg, almond flour, salt, red onion, coconut aminos, parsley, and mint. Mix thoroughly.
  5. Shape the mixture into 1.5-inch meatballs and place on a parchment-lined baking sheet.
  6. Bake for about 20 minutes until golden brown and internal temperature reaches 165°F (75°C).
  7. Blend roasted peppers, olive oil, red wine vinegar, garlic, and sea salt until smooth.
  8. Serve the meatballs with the roasted red pepper sauce over cauliflower rice, rice, or zucchini 'zoodles'.
