- Preheat your oven to 425°F (220°C).
- Halve the red bell peppers and remove the seeds. Brush with olive oil and roast for about 20 minutes.
- Lower the oven temperature to 375°F (190°C) after the peppers are done.
- In a mixing bowl, combine ground turkey, ground turkey sausage, egg, almond flour, salt, red onion, coconut aminos, parsley, and mint. Mix thoroughly.
- Shape the mixture into 1.5-inch meatballs and place on a parchment-lined baking sheet.
- Bake for about 20 minutes until golden brown and internal temperature reaches 165°F (75°C).
- Blend roasted peppers, olive oil, red wine vinegar, garlic, and sea salt until smooth.
- Serve the meatballs with the roasted red pepper sauce over cauliflower rice, rice, or zucchini 'zoodles'.
