Step-by-Step Instructions
  1. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add finely diced onions and sauté for about 5 minutes, stirring occasionally, until they turn translucent and fragrant. Then, add minced garlic and cook for an additional 30 seconds.
  2. In a large mixing bowl, combine the sautéed onions and garlic with fresh spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, and spices. Gently mix until just combined.
  3. With clean hands, shape the mixture into eight patties, each about ½ inch thick. Chill in the refrigerator for about 30 minutes.
  4. In the same skillet, heat the remaining olive oil over medium heat. Carefully add the shaped patties, ensuring they don’t touch each other. Cook each patty for 5-6 minutes until golden brown, then flip and cook for an additional 5-6 minutes until fully cooked.
  5. Once cooked, use a slotted spatula to transfer the patties to a plate lined with paper towels. Serve warm on greens, in pita bread, or with dipping sauces like tzatziki.
