For the Chicken Marinade
  • 1 pound Chicken Tenders skinless and boneless
  • 1/4 cup Extra Virgin Olive Oil or avocado oil
  • 2 tablespoons Freshly Squeezed Lemon Juice fresh juice preferred
  • 3 cloves Minced Garlic fresh garlic recommended
  • 1 tablespoon Dried Oregano or Italian seasoning
  • 1 teaspoon Dried Thyme or fresh thyme
  • 1 teaspoon Paprika smoked paprika for a twist
  • 1/2 teaspoon Salt adjust to taste
  • 1/4 teaspoon Black Pepper freshly ground
For Serving
  • 1 cup Tzatziki Sauce or hummus as a substitute
  • 2 cups Mixed Greens any salad greens
  • 1 cup Cherry Tomatoes halved

Method
 

Marination and Baking
  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper. Add chicken, coat well, cover, and refrigerate for 30 minutes to 2 hours.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Lay marinated chicken tenders on the baking sheet in a single layer.
  4. Bake for 15 to 20 minutes until internal temperature reaches 165°F (75°C) and edges are caramelized.
  5. Let rest for 5 minutes before serving.
  6. Serve with tzatziki sauce, mixed greens, and cherry tomatoes.
