  • 1 English cucumber diced for best results
  • 1 red bell pepper chopped, can use yellow
  • 1 can chickpeas canned or freshly cooked
  • 1/4 cup fresh parsley chopped, can substitute with cilantro
  • 1/2 cup olives any variety like Kalamata or green
  • 1/4 cup red onion thinly sliced, can use green onions
For the Dressing
  • 1/3 cup olive oil base for richness and smoothness
  • 1 tablespoon lemon juice fresh
  • 1 teaspoon dried oregano can substitute with fresh
  • 1 pinch sea salt adjust based on taste
  • 1 teaspoon dried dill weed
  • 1 to taste ground black pepper adjust to taste

Method
 

Salad Preparation
  1. In a large mixing bowl, add the diced cucumber, chopped bell pepper, chickpeas, chopped parsley, sliced olives, and thinly sliced red onion. Gently toss these ingredients together until evenly mixed.
  2. In a separate small bowl, whisk together olive oil, lemon juice, dried oregano, sea salt, dried dill weed, and black pepper to taste. Mix until well combined.
  3. Drizzle the lemon dressing over the salad ingredients in the large bowl. Toss gently to coat.
  4. Transfer the Mediterranean Cucumber Salad to a serving bowl or plates. Serve immediately or chill for up to 30 minutes.
