  • 3 cloves garlic, minced Fresh is best
  • 1 tablespoon fresh rosemary, chopped Can substitute with dried at a 1:3 ratio
  • 1 tablespoon fresh thyme, chopped Use 1 teaspoon dried if needed
  • 1 tablespoon fresh oregano, chopped Dried oregano also works
  • 1 teaspoon lemon zest Use fresh for best flavor
  • 1 teaspoon salt Adjust to taste
  • 1/2 teaspoon black pepper Freshly ground preferred
  • 1 lemon lemon juice Use fresh juice for optimal flavor

Method
 

Preparation Steps
  1. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, oregano, lemon zest, salt, and black pepper. Mix until well blended.
  2. Place chicken breasts in a shallow dish or plastic bag and pour the marinade over them, ensuring each piece is coated. Seal and refrigerate for at least 1 hour or overnight.
  3. Preheat the grill to medium-high heat, around 375–400°F (190–200°C).
  4. Remove the chicken from the marinade, allowing excess marinade to drip off, and discard the remaining marinade.
  5. Place chicken on the grill and cook for 6–7 minutes on one side, then flip and grill for an additional 6–7 minutes until internal temperature reaches 165°F (75°C).
  6. Transfer the grilled chicken to a cutting board and let it rest for 5 minutes to allow juices to redistribute.
  7. Before serving, squeeze fresh lemon juice over the chicken for added flavor.
