Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prick the sweet potatoes a few times with a fork and bake for 40-50 minutes until fork-tender.
  3. In a large mixing bowl, combine drained chickpeas, cherry tomatoes, cucumber, red onion, kalamata olives, and crumbled feta.
  4. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a separate bowl. Pour over filling and toss to combine.
  5. Once baked, slice sweet potatoes open lengthwise and fluff the insides with a fork.
  6. Stuff the sweet potatoes with the filling mixture and arrange on a platter.
