Ingredients
  

For the Salad
  • 1 pack Frozen Cheese Tortellini or fresh tortellini
  • 8 oz Smoked Turkey Sausage or your favorite sausage
  • 1/2 cup Prepared Pesto store-bought or homemade
  • 2 cups Fresh Baby Spinach or arugula
  • 1 cup Baby Portobello Mushrooms sliced
  • 1 can Cannellini Beans rinse before adding
  • 1 cup Roasted Sweet Red Peppers or fresh bell peppers
  • 1/2 cup Feta Cheese crumbled
  • 1/3 cup Greek Olives or Kalamata olives

Method
 

Cooking Instructions
  1. Cook the Frozen Cheese Tortellini in a large pot of salted boiling water for 3-5 minutes until tender. Drain and set aside.
  2. In a non-stick skillet, heat cooking spray over medium heat. Sauté the Smoked Turkey Sausage for 6-7 minutes until browned.
  3. Add the drained tortellini to the skillet with the sautéed sausage, then stir in the Prepared Pesto, Baby Spinach, Mushrooms, Cannellini Beans, Roasted Red Peppers, Feta Cheese, and Greek Olives.
  4. Combine everything gently until well mixed and the spinach wilts slightly. Remove from heat.
  5. Serve warm or allow to chill in the refrigerator for 10-15 minutes to enhance flavors.
