- In a large mixing bowl, combine 1 cup of finely chopped greens with 1 tablespoon of olive oil. Toss gently until coated but not soggy. Set aside.
- Cut the chosen melon into 1-inch to 1.5-inch cubes. Lay the melon cubes on a clean platter.
- Roll each of the 8 slices of prosciutto lengthwise to create a coil. Arrange them on a separate plate.
- Assemble the skewers by threading one melon cube, followed by a rolled slice of prosciutto, and a small amount of the prepared greens.
- Arrange the assembled skewers on a serving platter and serve immediately.
