  • 1 tablespoon olive oil to lightly moisten the greens
  • 1 whole melon cubed into 1" to 1.5" pieces
  • 8 slices prosciutto cut in half lengthwise

Step-by-Step Instructions
  1. In a large mixing bowl, combine 1 cup of finely chopped greens with 1 tablespoon of olive oil. Toss gently until coated but not soggy. Set aside.
  2. Cut the chosen melon into 1-inch to 1.5-inch cubes. Lay the melon cubes on a clean platter.
  3. Roll each of the 8 slices of prosciutto lengthwise to create a coil. Arrange them on a separate plate.
  4. Assemble the skewers by threading one melon cube, followed by a rolled slice of prosciutto, and a small amount of the prepared greens.
  5. Arrange the assembled skewers on a serving platter and serve immediately.
