Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat a 9x13-inch baking dish with cooking spray.
  2. In a skillet, heat olive oil over medium heat and sauté chopped onion, green pepper, and minced garlic for about 2 minutes.
  3. Add the ground chorizo and taco seasoning to the skillet and cook for 5-7 minutes until chorizo is browned.
  4. Layer 12 tortilla quarters evenly at the bottom of the prepared baking dish. Top with a third of the meat mixture and ½ cup cheese. Repeat the layering process.
  5. In a bowl, beat eggs and milk together, then pour the mixture over the layered casserole.
  6. Cover with aluminum foil and bake for about 30 minutes, then remove foil and add remaining cheese.
  7. Bake uncovered for an additional 20-25 minutes until the center is set. Let cool slightly before serving.
