Ingredients
  

  • 12 pieces Mini Pretzel Bites Available in grocery deli, bakery, or frozen sections.
  • 8 slices Bacon Cook until crispy.
  • 1 cup Lettuce Any leafy green works well.
  • 1 cup Cherry Tomatoes Cut into bite-sized pieces.
  • 1 4-oz jar Mayonnaise Can substitute with other spreads.
  • 1 cup Prepared Pesto Homemade or store-bought.
  • 1 cup Small Fresh Mozzarella Mini balls work best.
  • 12 leaves Basil Leaf Arugula or spinach can be substituted.
  • 2 pieces Sliced Cheddar Cheese Swap with your favorite cheese variety.

Method
 

Preparation
  1. Preheat the oven to 400°F for Mini BLT and Caprese bites or to 350°F for Mini Grilled Cheese.
  2. Carefully slice mini pretzel bites in half horizontally, keeping each half intact.
  3. Cook bacon on a lined baking sheet at 400°F for 12-18 minutes until crispy. Cool on a paper towel.
  4. Spread mayonnaise on the insides of pretzel halves, layer in bacon, lettuce, and cherry tomatoes for BLT.
  5. Mix pesto with mayonnaise to create a creamy pesto aioli. Prepare mozzarella and tomato for Caprese.
  6. Spread pesto aioli on pretzel halves, layer in mozzarella, tomatoes, and basil leaves for Caprese.
  7. Place a slice of cheddar cheese inside remaining pretzel halves and bake at 350°F for about 6 minutes.
  8. Allow bites to cool slightly before serving. Arrange on a platter with dipping sauces if desired.
