Mojito Cupcake Instructions
  1. Prep the Oven: Begin by preheating your oven to 350°F (175°C) and line a muffin tin with six parchment cupcake liners.
  2. Mix Dry Ingredients: In a mixing bowl, combine flour, baking powder, salt, sugar, and lime zest. Beat in the softened butter until smooth.
  3. Add Wet Ingredients: Pour in the oil, egg white, buttermilk, and vanilla, mixing gently. Fold in the white rum.
  4. Bake: Distribute the batter in the prepared liners and bake for 15-20 minutes. Check doneness with a toothpick.
  5. Soak with Rum: Allow cupcakes to cool slightly, then poke holes and brush with white rum.
  6. Make Frosting: Beat cream cheese and butter until fluffy. Gradually add powdered sugar and mix in rum and mint extract.
