Method
 

Preparation
  1. In a large bowl or resealable bag, combine the marinade ingredients. Add chicken and marinate for at least 30 minutes.
  2. Mix cowboy butter ingredients in another bowl until well combined, reserving some for basting.
  3. Thread marinated chicken onto skewers with space between pieces.
  4. Preheat grill to medium-high heat (around 400°F/200°C).
  5. Grill skewers for 4-5 minutes per side, basting with reserved cowboy butter.
  6. Remove from grill, brush with remaining cowboy butter, garnish with chives, and serve warm.
