- Preheat your oven to 375°F (190°C) and prepare an 8x8 inch baking dish by greasing it.
- In a high-sided pan, brown the ground beef with a sprinkle of salt for 3 to 5 minutes.
- Add garlic and mushrooms, cooking for 6 to 8 minutes until the mushrooms shrink and liquid evaporates.
- Transfer beef mixture to the baking dish, fold in goat cheese and 2/3 of the Swiss cheese, then top with scallions and remaining Swiss cheese.
- Bake uncovered for about 15 minutes until hot and cheese is melted and bubbling.
- Allow to cool for 5 minutes, then slice into four portions and serve hot.
