  • 1 lb Ground Beef 85% lean
  • 8 oz Mushrooms Cremini or baby bella
  • 5 cloves Garlic thinly sliced
  • 8 oz Swiss Cheese or cheddar or mozzarella
  • 4 oz Goat Cheese or feta or cream cheese
  • 3 pieces Scallions thinly sliced
  • Table Salt to taste
For Optional Variations
  • 1 lb Ground Turkey for a lighter alternative
  • 1 cup Riced Cauliflower for extra nutrients
  • 2 cups Fresh Spinach for added color and health benefits

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and prepare an 8x8 inch baking dish by greasing it.
  2. In a high-sided pan, brown the ground beef with a sprinkle of salt for 3 to 5 minutes.
  3. Add garlic and mushrooms, cooking for 6 to 8 minutes until the mushrooms shrink and liquid evaporates.
  4. Transfer beef mixture to the baking dish, fold in goat cheese and 2/3 of the Swiss cheese, then top with scallions and remaining Swiss cheese.
  5. Bake uncovered for about 15 minutes until hot and cheese is melted and bubbling.
  6. Allow to cool for 5 minutes, then slice into four portions and serve hot.
