Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and roast the chicken bones for about 30 minutes until golden brown.
  2. In a large pot, heat olive oil and sauté chopped onions, diced carrots, and celery for 5–7 minutes.
  3. Add roasted chicken bones, minced garlic, fresh herbs, salt, and pepper. Pour in the water to submerge all ingredients.
  4. Bring to a gentle boil, then reduce heat and let simmer uncovered for 6–12 hours.
  5. After simmering, strain the broth through a fine mesh sieve into another pot and adjust seasoning as needed.
