Preparation Steps
- Preheat your oven to 350°F (175°C).
- Mash about two ripe bananas until smooth and creamy.
- Combine the mashed bananas with nut or seed butter, vanilla extract, and plant-based milk; mix until well blended.
- Stir in ground flaxseed, baking powder, cinnamon, and salt; mix well.
- Fold in the cooked and cooled quinoa along with rolled oats until cohesive.
- Carefully fold in fresh blueberries or your chosen fruit.
- Grease an 8-inch square baking dish or line it with parchment paper; pour the mixture into the dish.
- Bake for 30-35 minutes until the edges are golden brown and the center feels firm.
- Allow to cool in the pan for at least 60 minutes before slicing into bars.
