  • 1 pinch Salt Adjust to taste.

  • 1 cup Cooked and Cooled Quinoa Ideal for using leftover quinoa.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Mash about two ripe bananas until smooth and creamy.
  3. Combine the mashed bananas with nut or seed butter, vanilla extract, and plant-based milk; mix until well blended.
  4. Stir in ground flaxseed, baking powder, cinnamon, and salt; mix well.
  5. Fold in the cooked and cooled quinoa along with rolled oats until cohesive.
  6. Carefully fold in fresh blueberries or your chosen fruit.
  7. Grease an 8-inch square baking dish or line it with parchment paper; pour the mixture into the dish.
  8. Bake for 30-35 minutes until the edges are golden brown and the center feels firm.
  9. Allow to cool in the pan for at least 60 minutes before slicing into bars.
