- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta cheese, dill, mint, lemon zest, and a pinch of black pepper. Mix until creamy.
- Lay out two sheets of phyllo pastry, coat with olive oil and cut into strips about three inches wide.
- Take one strip of phyllo, place a tablespoon of the filling one inch from the edge, and roll tightly.
- Brush the tops of the rolls with olive oil and bake for 18-20 minutes until golden brown.
- In a small saucepan, combine honey, chili flakes, and lemon juice over low heat until warm and mixed.
- Once baked, allow to cool slightly and drizzle with chili honey or serve on the side.
